Further Asparagus Inspiration


CREAM OF ASPARAGUS SOUP
Ingredients
1 bunch fresh asparagus
2 medium onions, chopped
3 medium white potatoes, chopped into roughly ½ inch cubes
vegetable bouillon concentrate (powder or paste)
3T unsalted butter
¼ C half & half (or ½ C 2% milk for the calorie conscious)
salt
freshly ground black pepper
water

1. Wash the asparagus, and snap off the woody ends. I do this by holding the stem in both hands and bending it. I can feel where the stiff part ends – and snap it off there.

2. Trim off the asparagus tips, and then the inch or so below the tips to make small, bite-sized pieces. Set aside. Chop up the rest of the stalks.

3. Melt half the butter in a dutch oven or soup pot. Add the onions and brown them slightly.

4. Add the chopped asparagus stems and potatoes to the onions, and enough water to cover. Add about 1 T of vegetable bouillon powder or paste. Stir and bring to a boil.

5. Turn down to a simmer. Add salt and lots of black pepper. Cook until all ingredients are very soft and can be easily smashed on the side of the pot with a wooden spoon (about 40 minutes).

6. While the soup is simmering, steam the asparagus tips in a separate pot, until just tender. Be careful not to overcook! As soon as they are done, uncover them, or they will overcook.

7. When the soup veggies are very soft, turn off the heat and puree until very smooth, in batches in a blender, or using a hand blender in the pot. If using a blender, add the half & half or milk gradually to the batches, to facilitate blending.

8. Add the remaining butter, half & half or milk, and steamed asparagus tips.

9. Adjust salt & pepper to taste. Add more butter or half & half as needed!

This recipe can be adapted to all kinds of vegetables. Use cauliflower or broccoli, steaming the tender florets separately, and adding some cheddar cheese instead of milk or cream. The variations are endless. I like thickening soup with potatoes instead of flour. They add a nice flavor and are so easy!

Further Evidence of Spring


EVERY SPRING I RECALL MY WIZENED HIGH SCHOOL LATIN TEACHER, MRS. LAMONT, EXTOLLING THE VIRTUES OF ASPARAGUS WITH A LOOK OF RAPTURE ON HER FACE. I'VE COME TO FEEL MUCH THE SAME WAY. THIS ASPARAGUS TRAVELED ALL THE WAY FROM CALIFORNIA. WE WON'T HAVE IT LOCALLY FOR ANOTHER MONTH. BUT WHEN WE DO, IT WILL BE AT EVERY ROADSIDE STAND - AND I HOPE TO VISIT THEM ALL! THERE IS NOTHING QUITE LIKE EATING ASPARAGUS IN THE EVENING THAT WAS CUT IN THE MORNING.
TONIGHT, I WILL TRY MAKING THIS SOUP.

Before and After 2

BEFORE: THIS PLACE HAD LOTS, AND LOTS, AND LOTS OF WOOD - ON THE WALLS, ON THE CEILINGS, EVERYWHERE. IT NEEDED BRIGHTENING UP. PLASTER AND WHITE PAINT WERE THE SOLUTION. AND BECAUSE IT'S A TINY LITTLE PLACE, I NEEDED MORE FLOOR SPACE. JG CUT THIS WALL IN HALF, AND EXTENDED THE FLOOR OVER THE KITCHEN TO GAIN 15 SQUARE FEET.


AFTER: SO MUCH MORE SPACIOUS! WHEN YOUR WHOLE HOUSE IS UNDER 800 SQUARE FEET, EVERY LITTLE BIT HELPS. IF YOU LOOK OVER THE SIDE OF THIS HALF WALL, YOU'LL BE LOOKING DOWN INTO THE KITCHEN.


BEFORE: THE SAME ROOM - WOOD, WOOD AND MORE WOOD.


AFTER: AH! MUCH BETTER!

Before and After

WELCOME TO MY NEW KITCHEN! I COULDN'T HAVE DONE IT WITHOUT THE HELP OF SOME VERY GOOD FRIENDS - ESPECIALLY JG, GENERAL CONTRACTOR EXTRORDINAIRE! I HOPE YOU WILL ENJOY THESE BEFORE AND AFTER PICS.


BEFORE: BUILT IN 1974, AND NOT MUCH DONE TO IMPROVE THE PLACE SINCE. IT WAS PRETTY WORN OUT.


AFTER! I LOVE THE SLATE FLOOR - VERY BEAUTIFUL, AND VERY ECONOMICAL.


BEFORE: ALL OF THE ORIGINAL BEAMS, CABINETS AND CLOSETS WERE BUILT FROM WOOD MILLED ON SITE, WITH COST-SAVING PLYWOOD FOR THE CABINET & DRAWER FRONTS. BUT THEY WERE IN SUCH ROUGH SHAPE, THERE WAS NOTHING TO DO BUT GO SHOPPING AT IKEA FOR REPLACEMENTS.


AFTER: I LOVE HAVING AN EXTRA DEEP SINK. I KEPT THE OLD DISHWASHER AND FRIDGE, WHICH ARE IN FINE SHAPE. GOOD LIGHTING MAKES ALL THE DIFFERENCE!



BEFORE: THIS WINDOW SEAT IS A MAJOR FEATURE IN THE KITCHEN, BUT WAS SO UGLY & TIRED OUT! A VERY DEAR FRIEND OFFERED A GIFT OF A HUGE SLAB OF BLACK SLATE TO COVER THE SEAT. IN WINTER IT'S A GREAT PLACE FOR PLANTS. IN SUMMER IT WILL BE A LOVELY PLACE TO SIT. ALL THE WALLS WERE SUPER-INSULATED, SKIM-COATED WITH PLASTER AND PAINTED.


THANK YOU TO ALL OF MY FRIENDS FOR THEIR LOVE AND SUPPORT- AND TO IKEA! BUYING A HOME ON MY OWN AND REMODELING IT WERE MORE STRESSFUL THAN I WOULD HAVE GUESSED. I AM SO HAPPY WITH THE RESULTS! I FEEL SO MUCH AT HOME HERE.

Miss Bettie

WHAT A SWEETIE PIE - NOT TO MENTION A BEAUTY QUEEN! BETTIE CAME TO ME FROM THE DAKIN ANIMAL SHELTER. IT'S A GREAT PLACE TO FIND A PAL.

A Cold Saturday in Shelburne Falls



I WENT TO SHELBURNE FALLS THIS MORNING WITH FRIENDS TO PRACTICE AT THE SHAMBHALA CENTER. AFTER LUNCH WE WALKED DOWN TO THE FALLS. WOW! A BITTER WIND, BUT STILL, A LOVELY WALK. THE SNOW IS MELTING - AND THE RIVERS ARE FLOWING FAST!
