What's For Dinner?

THIS IS A DELICIOUS, QUICK SUMMER MEAL! EMPHASIS ON DELICIOUS!
THE SALAD: BABY ARUGULA, BABY SPINACH, TOMATO, RED PEPPER, FRESH BASIL & KALAMATA OLIVES - TOSSED WITH A BIT OF NEWMAN'S LIGHT RED WINE & OLIVE OIL DRESSING. THE GREENS ARE FROM A MAINE FARM CALLED, "LOCALLY KNOWN" - THE BEST I'VE EVER TASTED!

A BIT OF GRATED PEPPERJACK CHEESE , MELTED BETWEEN TWO CORN TORTILLAS AND CUT INTO FOUR PIECES - EAT THEM WITH YOUR FINGERS!
A GLASS OF WHITE WINE COMPLETES THE MEAL. MMMMM . . .
